I've laid some bridge track a little too short so I've got ballasted track running into the bridge. Is it possible to highlight a segment of the ballasted track and convert it bridge track?

Yes, very easy.
Use the select tool from the upper left flyout. Highlight your track and then select another track type from teh right flyout. Done.

Thanks for the help. Unfortunately I can only select from the same range of track. I've got GN track running up each side of the bridge and SR bridge track on the bridge.

You may need to it this way with different track types coming together:

split, delete the unwanted track, then add in the new track to fill the gap.

RW can be a bit finicky where track of different makers (especially if different trackrule) come together
