I purchased the Southern Pacific SD45 and the BNSF SD75 from Steam and for the life of me I can't find them anywhere in the asset folder. I'd like to change the sounds.
Could someone point me in the right direction.

The SP SD45 is in the DTM folder and the SD75 is in the RSC folder.

They may be in the form of an AP file which you need to open first with RW_Tools or 7zip in order to see them if you still can't find them
